Commitment to Water
Using Nara's natural water "Gorokoro-mizu
Gorokoro Water" is a natural water from the Yoshino region of Nara Prefecture, and its name comes from the limestone chunks and sand that are found in the water.
The water is rich in natural minerals and is recognized for its smooth taste and flavor as it passes through limestone formations that serve as natural filters.
The unique water quality enhances the taste of food and coffee.
Commitment to Vessels
Using Pottery Made in Japan's Ancient Nara Period
Naraki" is a type of pottery produced in Japan during the ancient Nara period. It was made in the Yamato region, mainly in Nara Prefecture, and was mainly used as earthenware, roof tiles, and other daily necessities. During the Nara period (710-794), many temples and Buddhist statues were created under the influence of Buddhist culture, and Nara ware was also used as ritual utensils in temples and shrines and as earthenware in cemeteries.
Nara ware has a distinctive color and texture because it is made by kneading clay and then firing it using a unique process. To prevent the clay from mixing with each other, Nara ware is made by overlapping and combining different parts of the clay or by scraping it horizontally. This unique manufacturing process gives Nara ware its beautiful patterns and curves, and a special texture.
Commitment to Food
Nara's strong commitment to food and culture Enjoy Nara's strong commitment to food and its culture
Nara offers a wide variety of traditional dishes made with local ingredients and freshly prepared using organic farming methods.
There are also many farmers and small farms, and there are many "direct sales" places that sell locally grown food directly to the public.
Commitment to Bread
Not-So-Sweet" Bread Made with Flour from Nara Prefecture
In the midst of the boom in sweet high-grade bread, we felt uncomfortable with the "sweetness" of the bread we eat every day.
Mikatayama bread" was born out of the desire to create a loaf of bread that is not sweet, but rather noble and unique to Nara, using flour produced in Nara Prefecture and actively incorporating organic ingredients grown naturally to maximize the flavor and nutrition of fresh ingredients. The bread looks hard, but when you eat it, it is soft and chewy.
It goes great with a cup of coffee.
